Introducing Kristen Rollinson: The New Manager of Café At Theatre Porto
We are thrilled to announce that Kristen Rollinson has taken the reins as the new manager of Café At Theatre Porto. Kristen comes to us with a distinguished background in the culinary world, and her remarkable achievements in her previous role as the manager of James’ Cafe Bistro in Leicester have left a lasting mark on the industry.
James’ Cafe Bistro, which nearly faced permanent closure last year, emerged as the “Café/Bistro of the Year East Midlands” at The Food Awards England 2023. The awards, which celebrated and recognized outstanding contributions to the English food industry, served as a testament to Kristen’s dedication and the hard work of her team.

Sam Hutchinson (Communications Manager) caught up with Kirsten to ask a few questions…
What motivated you to take on the role of Café Manager at Café At Theatre Porto?
I have recently moved back into the area from Leicester, and was looking for a role that would incorporate my past experience. Alongside hospitality I am a creative tutor and mentor, so the job opportunity to work for 1st Enable as a skills coach and cafe manager was the perfect combination. The opportunity to pioneer potential in the people we support and serve delicious food at the same time, all within a creative space.
Are there any changes you intend to implement at Café At Theatre Porto?
Yes, from now on all our food and cakes will be homemade using as much local and homegrown produce as possible. I want the cafe and the theatre to become a team where we are working together for the same outcomes. I want to teach and the people we support recipes and cooking skills that will be valuable life long knowledge to support them during their life.
How do you plan to engage and involve the local community at Café At Theatre Porto?
I’d like to engage with the community by creating specials menus the change weekly that relate to what shows are on at the theatre, and the changing of seasons. I’d like to host events to showcase the talents of the people we support, and eventually I’d like a portable pizza oven that I can set up out the front of the building to directly connect with the public on the park by making fresh made pizza outside to order.
What treats can we expect to see on the menu over Autumn & Winter?
The allotments have provided me with lots of delicious apples so we will be making apple sauce for pies. I want to incorporate all those delicious autumnal vegetables into some healthy and hearty soups and stews. Gingerbread lattes and peppermint hot chocolate will be served at from the bar.
For winter I can see some Christmas dinner inspired grilled cheese sandwiches served with gravy. I’d also love to be able it invite people from the community and serve a proper 3 course Christmas dinner to those whom may not otherwise have the opportunity to have one.
